Baked salmon is a midweek staple in many homes thanks to its simplicity and nutritional goodness. This recipe is perfect for mixing things up, as it creates four juicy and flavourful salmon fillets using a simple, three-ingredient topping.

How to make salmon more flavourful

Ingredients

  • Four salmon filets
  • 115g sour cream
  • 1 ½ teaspoons whole-grain mustard
  • 20g finely grated Parmesan cheese
  • Salt and fresh ground pepper

Method

Preheat the oven 218°C. Prepare a large roasting tray or baking dish by either greasing it lightly with oil or lining it with parchment paper.

In a small mixing bowl, combine the sour cream, Dijon mustard, and grated Parmesan cheese. Add salt and pepper according to your preference and mix thoroughly.

Arrange the salmon fillets on the prepared tray. Spoon approximately two tablespoons of the sour cream mixture over each fillet, spreading it evenly across the top.

Transfer the tray to the oven and bake for 10 to 15 minutes, or until the thickest part of the fish is almost cooked through. The salmon should be mostly firm, though a slight translucency in the centre is ideal. Thicker fillets may require additional time.

Once done, take the tray out of the oven and loosely cover the salmon with foil and let it rest for five minutes before serving.
