The beloved Great British Bake Off is returning to our screens with its fifteenth series tonight, ushering in a new cohort of bakers to the esteemed white tent.

To start off the series on a sweet note, Cake Week has been chosen as the opening theme, with contestants tasked with creating the perfect the classic loaf cake.

Tasked with baking in a rectangular loaf tin traditionally used for bread, the bakers are expected to whip up their best recipes, bringing in a medley of flavours to distinguish their creations.

Upon completion, these loaf cakes are savoured in sliced form, presenting a change from the conventional wedge served from a round cake.

Usually finding their place in an oven, cakes can now be prepared using a more energy-conscious appliance thanks to the rise in popularity of air fryers.

These versatile devices offer the potential to bake with less fuss and are particularly appealing in today's energy-conscious climate.

BBC Good Food comes to the aid of budding home bakers by offering an exceptionally straightforward recipe for a lemon drizzle loaf cake designed to be made in an air fryer, reports the Mirror.

With just six basic ingredients which many might already have at home, this recipe is both accessible and convenient for those attempting this bake.

Enthusiastic home bakers have not hesitated to test the recipe with their feedback.

One such baker, known online as Andyandlouise51220, reported: "Brilliant, my silicon loaf pan became a little misshapen in the air fryer so I had an odd shaped loaf. Otherwise, it cooked in the time specified, tasted delicious and was super easy to make. Will definitely make again."

Fnorm202921240 posted a glowing review, saying: "Amazing Cake, Unfortunately couldn't find a loaf pan to fit in the air fryer so had to use a normal cake tin instead. End product was delicious."

So for those in a scramble for some quick baking inspiration, try your hand at this simple air fryer lemon drizzle cake recipe.

Air-fryer lemon drizzle cake

Ingredients

  • 250g butter, at room temperature
  • 250g caster sugar
  • 4 eggs
  • 250g self-raising flour
  • 3 lemons, zested and juiced
  • 100g icing sugar

Method

To create this zesty delight, youll need to line a loaf tin with greaseproof paper.

Combine butter, sugar, eggs, flour, a pinch of salt and two-thirds of the lemon zest then mix until it's light and airy, using an electric whisk for about 4-5 minutes.

Preheat your air-fryer to 160C, before spooning in your batter.

Cook it for between 60-70 minutes - if you insert a skewer and it emerges clean, you're on to a winner.

Should your bake start looking a touch too tanned, simply protect it with some foil.

After cooking, leave it to cool slightly, still in its tin, for about five minutes.

For that final tantalising touch, blend icing sugar with the leftover lemon zest and juice until you have a tempting, trickling topping.

Carefully transfer your cake onto a wire rack above a tray, perforate generously with a skewer, then lavishly lace with your icing till it cascades down the sides.

Let this citrus sensation set, then serve it up and bask in the glory of your culinary creation!
