Antony Worrall Thompson: The ultimate bacon sandwich
THE ultimate bacon sandwich.
Serves 1
4 rashers of smoked streaky bacon, rindless
25g (1oz) pork dripping or butter
2 slices sliced white bread
Ground black pepper
Butter, optional
Ketchup or brown sauce
Fry the bacon over a medium heat with the dripping until the bacon fat starts to turn golden, turning the bacon once. Remove and keep warm.
Take the two slices of bread and liberally pepper one side. Place the peppered sides down into the fat in the bacon pan and cook until the bread is golden.
If required, butter the uncooked side of the bread. Place the bacon on to the uncooked side.
Add the ketchup or brown sauce of your choice, then put the other slice of bread, uncooked side down, on top. Serve immediately.
