Vermicelli kitchdi
Vermicelli kitchdi is a very simple and quick breakfast recipe from south India which is low in fat and very tasty. Serves 2.
INGREDIENTS
Oil, for frying
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon gram dal
2 onions (finely chopped lengthwise)
2 green chillies (slit lengthwise)
1 string curry leaves
1 tomato (finely chopped)
1 carrot (finely grated)
1/2 teaspoon turmeric powder (optional)
Salt, to taste
800ml water
400g rice vermicelli (semiya)
METHOD
1) Heat the oil in a deep frying pan. Add the mustard seeds and let them splatter. Add the urad and gram dal and sauté until golden brown.
2) Add the onion, green chillies and curry leaves and sauté until transparent.
3) Add the tomato and sauté for 3 minutes, then add the carrot and sauté for 2 minutes.
4) Now add the turmeric powder, salt and water and bring to the boil.
5) When the water is boiling, add the vermicelli to the pan and simmer for 3 minutes. Stir occasionally.
